Course Description

Real bar skills, taught by real industry trainers

Whether you're looking for your first hospitality role or wanting to build your existing skills, Behind the Bar combines practical training, industry certifications and real-world placement to prepare you for work in today's hospitality industry.

You'll also gain essential industry knowledge such as RSA, food safety, workplace safety, processing transactions, and working confidently as part of a professional hospitality team.

You'll study the SIT30622 Certificate III in Hospitality with a focus on beer and spirits knowledge and bar operations: 15 units covering beers, spirits and liqueurs, bar management, and customer service. We'll also help you identify job opportunities, plan your career and learn how to work in a team with units from FSK20119 Certificate II in Skills for Work and Vocational Pathways.

Responsible Service of Alcohol certification, mandatory for any licensed venue role.

RSG

Responsible Service of Gambling, required for venues with gaming machines or TAB.

Espresso coffee preparation, milk texturing, and cafe service skills employers actually need.

Food Safety

HACCP principles, hygiene, allergen awareness, and safe food handling for hospitality venues.

Beer & Bar Operations

Operating a bar, pouring beer and wine, customer service and presentation.

Training Schedule

10 weeks of training, then real-venue placement

Training runs 2 days a week, 9am to 3pm, blending theory and hands-on practical. During the 10 weeks you will start your 36 shifts of work placement in a real hospitality venue.

Block 1 · Weeks 1–3

Hospitality Ready

Learn the essential skills that hospitality employers look for. This block focuses on working safely and effectively in a hospitality environment, being a valuable member of a team, communicating confidently with customers and co-workers, and providing great customer service. You'll also learn how to work respectfully with people from different backgrounds, respond to everyday workplace problems, and develop the practical workplace skills needed to succeed in hospitality.

Block 2 · Weeks 4–6

Hospitality Skills for Success

Develop the practical skills and industry knowledge that help you succeed in hospitality. You'll explore different hospitality careers and job opportunities, learn more about how the industry works, and build the reading and writing skills used in everyday hospitality workplaces.

You'll also develop hands-on venue skills including maintaining clean and professional premises, learn how to help and coach others in workplace tasks, and gain the knowledge required to provide responsible gambling services.

This block is about becoming a capable, informed and job-ready hospitality professional with skills that can be used across pubs, clubs, restaurants, cafés and other hospitality venues.

Block 3 · Weeks 7–8

Coffee & Food Safety

Get hands-on with two essential areas of hospitality: barista skills and food safety. Learn how to prepare and serve espresso coffee using commercial equipment, from setting up and operating the machine through to producing and presenting café-quality coffees. You'll also learn how to handle food safely, maintain good personal hygiene, prevent contamination and follow safe food-handling practices in a hospitality workplace.

This block combines practical skills with essential food-safety knowledge that can be used across cafés, restaurants, pubs, clubs and other hospitality venues.

Block 4 · Weeks 9–10

Behind the Bar

Get behind the bar and learn the practical skills needed to work confidently in a pub, club, bar or licensed venue. You'll learn how to set up and operate a bar, serve customers, use bar equipment, keep your work area clean and organised, and follow responsible service of alcohol requirements.

You'll also build your knowledge of beers, spirits and liqueurs, including different styles, characteristics and serving options, so you can confidently talk to customers, answer questions and make recommendations.

This block brings together the practical bar skills, RSA knowledge and product knowledge employers are looking for in bar staff.

Work Placement

36 Shifts in a Real Venue

At some stage throughout the course you'll complete 36 shifts of work placement in a real hospitality venue, putting your bar, coffee, customer service and safety skills into practice. It's your chance to build confidence, gain valuable industry experience and make a great impression. While the course doesn't guarantee paid employment, many students have secured jobs by impressing their placement employers with their attitude, work ethic and reliability.

Use your Cert III Hospitality as a pathway to higher education. Graduates are eligible to enrol in these next-level VET qualifications.

Fees & Eligibility

QLD Government funded for eligible students

This course is funded by the Queensland Government through the Career Start program. Career Start provides individuals with the skills and support to start their career, helping them find a job or move into more skilled roles.

Eligibility Criteria

To qualify for Career Start funding, you must:

  • Not already hold a Cert III or higher completed within the last 10 years
  • Be aged 15 years or older
  • Not currently be a school student
  • Be a Queensland resident
  • Be an Australian citizen, permanent resident, NZ citizen, or temporary resident on a pathway to permanent residency

Course Fees

SIT30622 Certificate III Hospitality

  • Non-Concessional $15.00 ($1/unit)
  • Concessional $10.50 ($0.70/unit)
  • Fee for Service (unfunded) $3,450

FSK20119 Certificate II Skills for Work and Vocational Pathways. No fees apply for Skills Assure funded students.

Payment options: invoiced, direct debit, bank transfer. Payment plans available for amounts over $1,500.
